Adrian and I’ve been grilling up a storm and which means we’re cooking with Australian grassfed beef. We determined to make these Aussie burgers slightly tangy with pickled pink onions, slightly easy with guacamole and cheddar cheese, and in addition slightly spicy as a result of – effectively, that’s what our style buds love! Australian Grassfed Beef Burger with a Summery Corn & Avocado Salad

Time: 40 minutes
Serves 4-6

Australian Grassfed Beef Burger
½ small pink onion, thinly sliced
3 tbsp contemporary lime juice, divided
2 massive ripe avocados, pitted, pores and skin eliminated
3 tsp garlic, finely chopped, divided
Kosher salt
Freshly floor black pepper
1 lb Australian grasssfed floor beef
1/2 cup bread crumbs
1 egg
1 tbsp chili powder
½ tsp cumin
4 slices sharp cheddar cheese
2 medium beefsteak tomatoes, sliced
4 brioche hamburger buns, calmly toasted if desired

Summery Corn & Avocado Salad
½ pink onion, finely diced
2 cups contemporary corn kernels
3 tbsp contemporary lime juice
¼ cup additional virgin olive oil
½ tsp floor cumin
¼ tsp kosher salt
1/8 tsp freshly floor black pepper
2 massive ripe avocados, pitted, pores and skin eliminated, lower into thick slices
1 medium English cucumber, thinly sliced
½ pint cherry tomatoes, halved
2 cups child arugula leaves
¼ cup mint leaves, roughly chopped
2 ounces queso fresco, crumbled
1/8 tsp pink pepper flakes, optionally available

Instructions
In a small bowl, mix pink onion with 1 tbsp lime juice. Put aside and permit the flavors to meld.

Add avocado to a medium bowl with 2 tbsp lime juice, and 1 tsp chopped garlic. Gently mash into guacamole with a fork till simply mixed. Season to style with salt and pepper.

Put together the salad components by combining the pink onion, corn kernels, lime juice, olive oil, cumin, salt, and pepper in a medium bowl. Add avocado slices to a big platter, adopted by the sliced cucumbers and tomatoes. Season with salt to style.  Prepare arugula leaves on high of the greens. Lastly, spoon over the corn combination and garnish mint, queso fresco, and pink chili flakes, if utilizing. Switch to the fridge till able to serve.
