✔️ 1/2-1 pink chilli

✔️ 500g mushrooms*

✔️ 400g tenderstem broccoli

✔️ 300g beansprouts

✔️ 1 pack of smoked tofu

✔️ 400g dried noodles (egg-free)

✔️ 4 tbsp sesame oil

✔️ 4 tbsp soy sauce

✔️ A handful of peanuts/almonds

✔️ Bunch of coriander

✔️ Juice of a lime

*For the mushrooms, I used a mixture of button, chestnut, nameko and shiitake, however you possibly can swap them in your favorite!

𝐌𝐄𝐓𝐇𝐎𝐃⁣ 🥣 ⁣

1️⃣ PREP – Mince the onion, garlic, ginger and chilli. Cube the smoked tofu & mushrooms into small cubes. Chop the Tenderstem broccoli in half if mandatory.

2️⃣ Put together a pan of salted water in your noodles within the bowl. When the water boils, add the noodles & cook dinner in line with the packet directions. Rinse with chilly water after cooking and put aside.

3️⃣ Meantime, warmth the sesame oil in a frying pan/giant wok over medium warmth. Add onion and cook dinner for a few minutes, till it softens.

4️⃣ Then add the ginger, garlic, & chilli, and cook dinner for a couple of minutes, including a small splash of water if mandatory.

5️⃣ Add the mushrooms, smoked tofu & 2 tbsp soy sauce to the pan. Fry for 10 minutes, or till the liquid has been lowered.

6️⃣ Lastly, add the broccoli, leftover soy sauce & the juice of half a lime. Toss within the noodles and stir over excessive warmth till the broccoli is crisp & the noodles are heat.

Serve it with the remaining lime juice, crumbled peanuts/almonds, and coriander on prime. Take pleasure in!!
