Climate Notes:

The notorious frigid entrance blasted in in the course of the early morning hours of the twenty third.
It was 45°F (7°C) at midnight, however by dawn it had dropped to 26°F (-3°C) and stored on dropping. By the following morning, the thermometer registered 7°F (-14°C). The frozen chilly lasted for about 5 days earlier than returning to extra typical (for us) winter climate. And that was sufficient to freeze my winter backyard lifeless. Some years are like that.

Harvesting

Most of those images have been taken earlier than our deep freeze.

Daikon radishes
Lettuce and kale

Jerusalem artichokes
Turnips

The turnips did not come from the backyard. Moderately, these got here out of the
pasture. Dan planted a deer plot combine final August for a canopy crop and winter
foraging for the goats. Moreover grasses, the combo included daikon, turnips, and
forage mustard. So we profit from it too.

Turnips rising within the pasture.

When the forecast predicted temps within the teenagers and beneath, I went out and
harvested as many as I might to retailer within the pantry. Repeated freezing and
thawing will flip them to mush.

The entire largest turnips from the pasture.

Final summer season, I planted squash in our pasture combine. The goats fully
ignored it, and I harvested squashes for us to eat. We had range within the
pasture and good issues to eat too. That is serving to me to view our complete
homestead as a meals rising system with a number of advantages.

Consuming

We loved contemporary greens in early December.

Sauteed greens (daikon, turnip, mustard,
kale, and collards) with grated candy potato.

With the greens all frozen out, we’ll need to depend on canned greens. However we will nonetheless get pleasure from contemporary root crops.

I managed to get a half-gallon of kimchi made earlier than the freeze. Now, I want I might made no less than a gallon or extra.

Kimchi: daikon roots and leaves, cabbage,
 turnips,
Jerusalem artichoke, and ginger.

We eat kimchi as a aspect dish or as a slaw-like salad. I experimented with sauerkraut, and found that it takes solely a small quantity of mayonnaise to make a
kraut slaw( in comparison with making cole slaw with uncooked cabbage). Kimchi slaw
makes a tasty salad too.

Hotter climate and rain is within the forecast for the tail finish of the month. I will replace my December rainfall information after that.

I do not reckon anyone within the northern hemisphere has a backyard left. Except, somebody is greenhouse rising? Hopefully, everybody’s pantry is full.
