Nothing prepared within the backyard but for chutney making so I purchased some pink onions and a bottle of pink wine vinegar from Aldi for a batch of pink onion ‘marmalade’ chutney. The three giant pink onions did not weigh a lot so I added some bizarre onions too – just below 2lb whole. That is about as many as I can peel directly with out dissolving into tears.
That is a simple chutney. As soon as the onions are peeled and sliced – and I do the slicing within the processor attachment to my Kenwood – then it is simply dissolving sugar in vinegar, including the salted, rinsed and dried onions, some caraway seeds and cooking till thickened however not till all of the liquid had gone.
3½ jars made. Solely drawback with making that is it one way or the other tends to depart bits of onion everywhere in the kitchen!
Cucumber Candy and Bitter Pickles subsequent…………..there are 4 cucumbers within the greenhouse that can be prepared all of sudden very quickly.
