Final week, a reader named Emily wrote to us…

Emily had learn this Brooklyn house tour, by which creator Emma Straub had talked about go-to household meals. “Our #1 most cooked dish,” mentioned Straub, “is that this sheet pan red onion tomato feta broccoli situation. That’s at all times what we cook dinner after we can’t probably give it some thought.”

“It made me assume,” wrote Emily, “that I’d actually like to listen to different folks’s easy meals to cook dinner in a pinch.”

We’re glad you requested! My go-tos are always altering and often egg-based — empty-the-fridge frittatas, migas, egg-and-cheese tortillas, scrambled eggs on toast — however one other one which has been round eternally is spicy chickpeas with yogurt.

I merely fry drained and dried chickpeas in olive oil; spike them with cayenne, onion powder, and somewhat smoked paprika; then serve with rice or store-bought naan, plain yogurt, and no matter herb I’ve round (cilantro, mint, and so on). Lastly, I add a drizzle of the Maggi tamarind sauce that I realized about from Priya Krishna and that’s so good it’s drinkable. (If I’ve spinach, and I often do, I’ll chuck that in on the finish, too.)

What about you? What’s your no-energy-left dinner in pinch?

P.S. Family dinners we’ve loved to death and reader’s best kitchen hacks.
