Components:
- 4 boneless skinless hen breast halves (4 ounces every)
- 2 ½ cups recent mushrooms, sliced
- 1 ½ cups white onions
- ½ cup candy purple pepper, julienned
- ¼ tsp pepper
- 3 tsp recent thyme, minced
- ½ tsp salt, non-obligatory
- Lemon wedges, non-obligatory
Instructions:
- Preheat oven to 375°F.
- Flatten hen breasts to ½ in. thickness. Place every on a bit of professional quality foil (about 12 in. sq.).
- Layer the mushrooms, onions, and purple pepper over hen.
- Sprinkle with pepper, thyme and, salt, if desired.
- Fold foil round hen and greens and seal tightly. Place on a baking sheet. Bake till hen juices run clear, about 20 minutes.
- Serve with lemon wedges, if desired.
